Chef and pitmaster, Shannon is passionate and dedicated about her love of BBQ food and tending to the smokers day and night. She has been featured on the Cooking Channel and the Food Network. At Rolling Smoke BBQ Food Truck, we specialize in Southern-style BBQ. Which means we use a dry rub and slow-smoke our meats over Apple and Hickory wood for 12 to 16 hours. This creates a crispy bark on the outside and a juicy, tender inside.
