At Rolling Smoke BBQ Food Truck, we specialize in Southern-style BBQ. Which means we use a dry rub and slow-smoke our meats over Apple and Hickory wood for 12 to 16 hours. This creates a crispy bark on the outside and a juicy, tender inside.
